March 10 thru 14– Days 64 thru 68
On the Up Swing
YAY!!! I’m so happy, thankful and grateful for my health and the ability to move and breathe and see and walk and jump and think and feel! There is nothing like coming out of the fog of being sick and feeling good again. Thank you God! As you can see I am VERY happy to be feeling better after the last two weeks!
This last week of Beta flew by. This week was tough, especially at the beginning of the week but I’m amazed by how much I was able to do and how far I have come with my fitness. Remember in the beginning I couldn’t even do one Burpee? Well, I’m doing them! They’re not perfect, but I have come a long way baby! I still have to Weigh In this week and complete the Stretch on Sunday to truly finish out the program but the hard workouts are done! I won’t celebrate until Monday though…lol!
I’m going to do Gamma Phase which unlike Alpha Phase and Beta Phase is only four weeks, but I haven’t gotten it yet, so I am going to do a mashup of Beta video and Blogilates this coming week until it arrives. I’m excited to see what craziness is on Gamma. After that, I may switch to another program altogether. Not sure if Insanity or P90 (any version) is in my future but I will see.
Seared Scallops with Snow Peas and Orange
This was a Real Simple recipe that I did which was delicious! I seared the scallops to perfection and the slight orange flavor that was infused in the olive oil of the sautéed snow peas was a perfect complement. The quinoa added a nice starchy compliment to it all, but I have to tell you that if I didn’t have the quinoa, the meal still would have been good with just the scallops and the snow peas.
One thing I will say is that as delicious as this meal is, scallops are freakin’ expensive! I was like whaaaah? But I was committed to the recipe and sucked it up for the one meal. It was worth it though. It was so good and a nice specialty meal. So good. Try it when you pocket allows for the cost of scallops! Just click the pic for the recipe!
Cheat Meal Problems
It’s been five weeks since my last cheat meal. What am I going to do this week as I finish alpha? Unlike that crazy sandwich a few weeks back, I hadn’t thought about a good cheat meal. Any thoughts out there guys? Let me know.
